Quinoa Salad

Quinoa Salad

This healthy quinoa salad is so good! It's great as a side dish or as a lunch. The salad keeps well, making it ideal for meal prepping.

Ingredients
  

  • 1 Cup Uncooked Quinoa rinsed in a fine-mesh colander
  • 2 Cups Water
  • 1 15 oz Can Chickpeas rinsed and drained
  • 2 Medium Bell Peppers preferrably red, yellow, or orange
  • 1 Small Red Onion chopped
  • 1 Cup Cilantro finely chopped
  • 1/4 Cup Olive Oil
  • 1/4 Cup Lime Juice from 2-3 limes
  • 1 Tbsp Apple Cider Vinegar
  • 2 Cloves Garlic minced
  • 1/2 tsp Salt
  • Pepper to taste

Instructions
 

  • Cook the quinoa according to package instructions. Once it is cooked, set aside to cool.
  • Combine the chickpeas, bell peppers, onion, and cilantro in a large serving bowl.
  • Make the dressing by whisking the olive oil, lime juice, vinegar, garlic and salt in a small bowl.
  • Once the quinoa is mostly cool, add it to the large serving bowl. Pour the dressing on top and stir the salad until everything is thoroughly mixed. Season with pepper and additional salt if necessary.
  • Let the salad rest for 10 minutes before serving.
